Pepita is the Spanish word for pumpkin seed ! Pepitas come from hulless pumpkin seeds that come from winter long season cucurbits (Cucurbita pepo L. group Pepo, Cucurbitaceae) with seeds that do not have a tough outer hull like regular pumpkins...naked seeds / hulless seeds contain 40 to 50 percent oil and are much more nutrient-dense.
TIP: If you want seeds without the husk...you will need to get the thin-skinned Styrian or oilseed pumpkins) that have shell-free seeds

***You will want an ice cream scoop or a large, sturdy spoon to get the insides out of the pumpkin...a colander or strainer a towel without fuzzies...
ROASTED SPICED PUMPKIN SEEDS
For this recipe make sure you remove the outer husks from the green seed inside it. It's the seed that is so good & nutritious to eat, not the husk-covered seed.Some like to also bake them with the husk on but then the seed is not getting all that yummy seasoning !
Scoop out all the goodies from inside your pumpkin, next you will need to separate seeds from all that pulp....Here is just one of many recipes !
Roasted Spiced Pumpkin Seeds
2 cups raw, cleaned and hulled pumpkin seeds
1 tablespoons melted butter
1 tablespoon lime juice
4 tablespoons sugar
1/2 tsp Smoked Paprika-Sprinkle and toss with a little Smoked Paprika
1 teaspoon salt
Other spices you could use and adjust to your liking in many different combinations ! : 1/4 teaspoon cayenne pepper, 2 teaspoons chile powder and/or 1 teaspoon Vietnamese cinnamon...1 teaspoon chili powder...1 teaspoon Worcestershire sauce...1/8 to 1/4 teaspoon hot pepper sauce...1/4 teaspoon ground cumin..2 tablespoons salted butter...½ teaspoon lemon pepper....½ teaspoon garlic powder OR even finely minced garlic...¼ teaspoon salt...1 tsp fresh squeezed orange juice...
1 oz coffee-flavored syrup ....1 tbsp Pumpkin Pie Spice...Mix & Match As You like
Preheat the oven to 250 degrees to 350 degrees F. You should spray a big cookie sheet with a healthy nonstick spray OR use parchment on the pan....
Next mix all the green pumpkin seeds with your melted butter, lime juice, sugar and salt, and any other spice you want
THEN: mix seeds and all until the seeds are evenly coated.
NEXT: make sure you spread the seeds evenly on your cookie sheet and you will roast the pumpkin seeds for about 20-30 minutes until the seeds are lightly browned without burning (20 minutes should be good), turning them every 5 minutes or so....so that they toast evenly.
NEXT: Remove from oven and cool completely. It's best to keep your roasted pumpkin seeds in airtight container for up to about one week.
TIP: If you choose to leave the seed husk on ...then the pumpkin seeds should be boiled in salted water before roasting. This helps the shell to get nice & crispy !
TIP: Probably the best way to roast the pumpkin seeds is at a low temperature and making sure you keep a close eye on them towards the end because you do NOT want them to burn.
TIP: If the outside of pumpkin seed is overly browned this means the inner seed is burning.

Spiced Pumpkin Seed Brittle
1 cup sugar
3/4 cup hulled pumpkin seeds
2 tablespoons unsalted butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1/4 teaspoon baking powder

Grease a 9×12 baking sheet with butter and set aside.
In a small, heavy-bottomed pot over a medium low flame, melt the butter with the cinnamon,ginger and sea salt...You may add other spices that you think will work with the spices in this recipe or change them all together... Add the sugar and stir thoroughly. Continue to stir sugar almost constantly to prevent burning. When the temperature of the mixture reaches 280 degrees, add the nuts. Continue stirring almost constantly.
The sugar will slowly begin to clump and melt. Keep stirring! At 300 degrees, remove from heat and quicky stir in the baking powder.
Working quickly, pour the brittle onto the greased baking pan, spreading with a spatula. Let stand until thoroughly cooled and hardened. (You can expedite this by putting it into the fridge.)

2 cups roasted, unsalted hulled pumpkin seeds
6 tablespoons extra-virgin olive oil, divided
1/4 teaspoon fine sea salt, plus more to taste
2 tablespoons fresh lemon juice, or to taste

Combine roasted pumpkin seeds in a food processor with 1/4 cup water, lemon juice, garlic, cilantro and remaining 4 tablespoons oil. Pulse until mixture forms a coarse paste, then season to taste with salt and pepper. Cover and chill until ready to use.
